100% Sangiovese di Romagna
Sfera is short for ‘atmosphere’ in Italian, and they are on a mission to bring 'cosmic verve in a litre bottle from the Alps to the Mediterranean'. They work with a roster of certified-organic growers across Italy, making fun wines that are an Italian take on the easy-drinking 'vin de soif' of France. Each cuvée is produced on a limited basis and is made entirely from the grapes of a single grower to maintain a relationship between the terroir and wine.
This Sangiovese comes from Fattoria del Monticino Rosso, who have different plots located in two different nearby valleys. Valle del Senio, which takes the name from the Senio River, is surrounded by forests, which mitigate the temperatures in the area and bring significant temperature ranges. Valle del gesso ( “Chalk Valley”) is so called precisely because of the presence of chalk in the soils, a characteristic that, together with the hills on which the vineyards are planted, contributes to the minerality and elegance of the local Sangiovese. The wine is aged in cement, allowing it to breath and display herbal and mineral aromas.
Tasting Notes: Herbal, spiced, chalky
Food Pairing: Pair with beef tartare, or our Finnochiona Salami.
