Lou Nouste


Lou Nousté is a hard-paste raw sheep's milk cheese from the Pyrenees in the South of France. This cheese is the creation of a cooperative of shepherds from the three Pyrenean Valleys of the Béarn: the Aspe, the Baretous and the Ossau. It is always made from the milk of the local red- and black-headed sheep, the two main breeds in the Basque country, and produced between November and August.

When young, it is fruity and salty with hints of hazelnuts. As it matures it becomes more earthy.

This is a great summer picnic cheese, very easy going and approachable. A definite crowdpleaser. It can also be incorporated into dishes, used as one would a pecorino, grated into salads or a pasta dish.
