100% Grenache Noir
In the rugged hills of the Roussillon, a quiet winemaking revolution is taking place. The region was once known for producing seas of fortified 'Vin Doux Naturel' but its declining popularity has seen vineyards abandoned and towns depopulated. However, the region is dotted with parcels of old vines capable of producing extraordinary wines. These have attracted producers such as Jean Phillipe Padié, who farms 18ha of vines divided up into 30 parcels around the town of Calce.
This cuvée from Jean Philippe Padié highlights the quintessence of Grenache noir. The vines, planted on schist marl, benefit from a southern exposure, guaranteeing optimal ripeness of the grapes. The harvest is carried out manually and the grapes are transported in crates to preserve their integrity.
The vinification is carried out with respect for the fruit. After arriving at the winery, the grapes macerate in concrete vats for 15 days in whole bunches. No punching down or pumping over is carried out, allowing a gentle extraction of aromas and tannins. Fermentation is natural, thanks to indigenous yeasts. After devatting, the free-run and pressed juices are blended, then the wine is put into old 300-litre barrels. Ageing in barrels lasts 8 months, followed by a one-month rest in stainless steel vats, before bottling.
