Syrah, Carignan, Mourvèdre
Chloé and Fred packed in their London jobs and travelled around France pursuing their dream of making wine. They settled on an eight-hectare garrigue-fringed slice of heaven in 2016. The location is on the hallowed soils of Faugères in the Languedoc, famous for it’s solid bedrock of Schist. On the rocky Schist soils, old vines have to work hard to establish their roots, but the result is concentrated and balanced wines.
Chloé and Fred farm biodynamically and use natural treatments and minimal copper. They have recently built a cellar that allows them to be self-sufficient on the land. Standing in the vineyard and looking out over the coastal plain and the sea, it is clear why the couple chose to name their domain ‘Serrals’, the Occitan word for hills.
The Côte à Côte comes from the 35 year old vines of a single plot, sitting on a hill in the vineyard with a view all the way to Sète. Elevage takes place half in an egg shaped vessel made of a of clay and sand, and 40% in barrel.. This is the more full bodied cuvée from the domaine, with 2 years élevage and some beautifully smooth tannins (helped by the Schist soils). A rich and expressive example of a Faugères red.
Tasting notes: Rich and dense, with black fruits, earthiness and a refreshing acidity.
