Grenache, Syrah, Cabernet Sauvignon
Cros des Calades is the latest project from Florence and Benoît Chazallon of Château de la Selve. Florence and Benoît's property is located in Ardèche, nestled between the Cévennes and the Rhône. For Cros des Calades, they source fruit from five neighbouring estates in the Ardèche and Gard departments, all within just a few miles of their own vineyards. Their winemaking philosophy is simple: respect the terroir and intervene minimally in the winery. This approach aims to produce pure, fresh, and enjoyable wines at an affordable price.
This cuvée has all the wonderful, open fruitiness of Grenache and Syrah with some structure from Cabernet Sauvignon. The fruit comes from vines averaging 30 years old on clay and limestone soils between the Rhône and the Cévennes mountains. The wine is spontaneously fermented in stainless steel tanks, with a 20-day maceration and regular pump-overs. After pressing, the wine is clarified through sedimentation and is neither fined nor filtered.
Tasting Notes : Fragrant and juicy, with aromas of raspberry, cracked pepper and garrigue.
Food Pairing : Pair with something hearty and warming like Bernardi’s wonderful Beef Gulash.
