Appenzeller from Switzerland is a full-bodied cheese with spicy flavour that gets stronger as it ages. It has a smooth texture and a fruity tang. The flavour profile is very rich and complex, with minerality and herbaceousness, a touch of sweetness, and a long finish.
Appenzeller is a great melting cheese and often served over potatoes. It would pair excellently with a slightly richer but fresh alpine white wine, such as Yves Duport's Altesse de Montagnieu.
Ingredients: Milk (cow's), traditional rennet, salt. Unpasteurised.
