Pinot Noir, Gamay
Naïma and David fulfilled their lifelong dream of owning their own estate when they took over 2 hectares of vines in Chassey-le-Camp in the Côte de Beaune in 2017. The vineyard is comprised of Pinot Noir, Pinot Blanc, and Aligoté planted between 1947 and 1960 using "sélection massale". Much work has been undertaken to restore biodiversity to the vineyard, including planting as many trees as possible.
The vineyard's soils are a mix of clay, limestone, and decomposed blue marne, which helps with water retention during dry periods. The primary vineyard faces east, providing some protection from the southern winds. David and Naïma have been working with a homeopath who used to be an enologist to maximise the health of their vines. Amongst other things, this involves analysing drops of wine to assess the vines' performance. A truly natural approach !
Stylistically, the wines are perfumed, aromatic and silky, and balance is always sought.
Naïma and David carefully select the Pinot Noir and Gamay grapes for Vin Libre from local organic growers in the lower Meursault region. They ferment the grapes as whole bunches in a fiberglass tank, allowing ten days of maceration. Once pressed, the wine is matured for a period of nine months in old Burgundy barrels. No additional substances or additives are added during the process.
Tasting Notes : Light and fragrant with notes of raspberry, blackberry and rose.
Food Pairing : Morteau sausage with lentils, Rabbit terrine or anything else that’s rustic, simple, and delicious !
