Palomino Fino 

Since the sherry bubble burst in the late-1970s, grape growers in Andalucia have been searching around for something to do with their excess grapes. Many, including Hacienda La Parrilla, have turned to make unfortified reds and whites as a solution. These grapes are grown on unique albrariza soils which form a crust during the bakingly-hot summers, helping retain precious moisture to help the vine grow.

The vineyards that produce this wine are part of a large estate that includes old olive groves, a vineyard and pasture for Iberico pigs to roam. The wine is fermented and aged in concrete vats to produce a wine that is surprisingly fresh for such a warm region.

Tasting notes : Green apples, lemon zest, saline. Fresh with brilliant acidity.

Food pairing : Pair as you would a fresh fino sherry. Ideal with a piece of Manchego and some slices of our Ibaiama Ham !
