Produced by Neals Yard Creamery in rural Herefordshire close to the English border with Wales. Milk is collected daily from a single farm 15km from the creamery. Ragstone is a log shaped goat’s cheese with a pale and wrinkly rind. Ragstone has aromas of mushroom, vegetables and citrus. Flavour wise Ragstone is savoury, lactic and ‘mushroomy’ which are long and complex on the palate. Ragstone has a lovely smooth and creamy texture, with a ‘buttery’ breakdown around the rind.
Ragstone was one of the original cheeses produced by Charlie Westhead whilst Neals Yard Creamery located near Sevenoaks in Kent and the cheese is named after the Ragstone ridge of hills the runs close by. In 1996 Charlie then relocated to the creamery to the Golden Valley in rural Herefordshire where it remains.
A lovely addition to a cheese board or as the star of a goat’s cheese and onion tart. The savoury and mushroomy flavours pair very well with a fuller and aromatic white wine.
