Cropwell Bishop Stilton

Cropwell Bishop Stilton has a natural, light brown rind. The paste is ivory colour with blue veining throughout, almost as though it were marbled. The texture is both crumbly and creamy and it has a deep rich flavour, with a pleasant salty finish.

According to the Stilton Cheesemaker’s Association, Stilton was first marketed by Cooper Thornhill in the 1730s at his pub, the Bell Inn, after having discovered a distinctive blue cheese at a farm in Leicestershire. The pub was located on the Great North Road in the village of Stilton - the main route between London and the North of England – which would explain how popularity and demand for the cheese grew across the country.

Port is the famous pairing, and for good reason - the sweetness of the port perfectly complements the piquancy of the Stilton. Another traditional accompaniment is dried fruit and walnuts.
