Conservas Yurrita is a family-owned business which was founded in 1867. They began by selling pickled and salted fish from Mutriku (Spanish Basque) to the rest of Spain.
They are still located in Mutriku, a town with a long tradition of canning fish. After five generations and a history of almost 150 years, Yurrita is the oldest canning company in the Basque Country and one of the oldest agri-food industries in operation in Spain.
The Anchovies from the Cantabrian Sea are bought directly from the fishing boats, only selecting the freshest and optimum-sized anchovies. These are salted and packed in traditional cans and cured for at least 20 months. The anchovy fillets are prepared by hand and are properly washed in order to reach the right saltiness, then sliced meticulously to get rid of the bones.
Yurrita uses raw materials that have been caught in a way that respects the traditional arts of fishing, as well as the Marine Sanctuaries and Sustainable Fishing Management.
Anchovies are a perfect way to enliven a pasta sauce or as part of a salade niçoise. With their rich saltiness, they are perfectly paired with pizza or simply added to a generously buttered slice of sourdough.
