We have worked with Mayte since Provisions started in 2015. They are a ham specialist (see Ibaima Ham), but also make their own cured meats in St Jean Le Vieux in the French Basque Country. They only use Basque pigs in their recipes.

Their Berret (we were mistakenly calling it Bonnet when we opened, and have continued to do so ever since) is a meaty camembert-shaped saucisson which contains over 80% lean pork meat. This is an earthy and rustic saucisson!
