Yves farms 10 ha of vines biodynamically with great success in the Bugey, a tiny appellation of only 500 ha. He makes elegant, precise and controlled wines from Pinot, Mondeuse, Altesse (Rousette) and Chardonnay. The geology of Bugey is similar to its neighbour, Savoie – fragmented parcels of vines planted on steep slopes above the valley floor. The sedimentary soils date back to a time when dinosaurs roamed and the climate was tropical.

This wine is a 'Pet-Nat' or Pétillant-Naturel, made by bottling wine before it has finished fermenting and allowing it to continue in the sealed bottle, trapping the CO2 produced and making the wine slightly fizzy.

Tasting notes: Apples, pears, white flowers. Dry, wonderfully fresh and incredibly juicy. 

Food pairing: Delicately flavoured foods such as fresh goats' milk cheeses, simple salads and charcuterie.
