Valli Unite is a winemaking cooperative or co-op, formed thirty years ago to preserve traditional ways of farming grapes. The co-op brings together 30 small producers who pool their grapes every year and make their wine together. They farm organically and cover their vineyards with other crops other promote biodiversity, use sickles to cut back weeds and use manure from their cattle to fertilise the vineyard.

The grapes are fermented in cement vats to retain the wine's fruitiness and then aged for a short while in oak vats to smooth out any rough edges.

Tasting notes : Black cherries, blackberries, cacao. Medium-bodied with just a little touch of richness.

Food pairing : A great option for roasted tomato and aubergine or a rack of ribs. It’d also be great with our rich wild boar saucisson.
