St Nectaire is a round cheese with a dark grey, hairy rind and straw yellow paste. On the nose there are notes of hazelnut, straw, green vegetables, mould and cave. On the palate it is gooey, with flavours of asparagus or cabbage. St Nectaire has also a strong acidity due to the cow’s diet of potassium and azote rich grass from volcanic soils.
The St Nectaire we have is from the Fromagerie Guillaume, which is the one of the two last maturers of St Nectaire that still mature their cheeses in natural caves.
St Nectaire is great on its own, or it can be baked in a tradition tomato tart with cumin.
Ingredients: Milk (cow's), salt, traditional rennet. Unpasteurised.
