Chardonnay

Julien Altaber’s Sextant project is part of Burgundy’s new wave, blending deep respect for tradition with a free-spirited, natural approach. Based in Saint-Aubin, he works organically and lets each cuvée express its own character through native yeast fermentation, no fining or filtration, and minimal sulphur.

Plein Pô ’22 is Altaber’s take on an orange Chardonnay, macerated on its skins to bring colour, texture, and a completely different aromatic profile. It’s a wine full of energy and grip, with that signature Sextant balance of purity and tension.

Tasting notes: Candied orange peel, pink grapefruit, a hint of honey and light tea tannin. Textured, slightly grippy, but still vibrant and fresh.

Food pairing: Great with spiced dishes, seared tuna, or soft, creamy cheeses like Brillat-Savarin.
