100% Aligote
The Santini Collective is a négociant based in Auxey-Duresses which focuses on providing vin de soif, fashioned from interesting and unique terroirs. Chris Santini is based in Beaune and has been sourcing parcels from the Southern Rhone all the way to Champlitte, the northernmost part of Burgundy bordering Franche-Comté.
All their wines are fermented with native yeasts and bottled unfiltered. Chris’ wines are always leaning towards the perfumed, gently extraction style. He calls a lot of his fermentations ‘infusions’ as he aims to extract as little as possible. The goal of Santini Collective is to 'honour and perpetuate the accessible, naturally made and easy-drinking wines our Corsican and French ancestors enjoyed for generations.' Orange, but still very drinkable and smooth.
This is a three-week, carbonic, whole cluster maceration cuvée. From biodynamic vines below Volnay, right next to Lafarge Raisin d'Or vines. This is the first Aligote Chris has ever made, with harvest help from Provisions team member Matt!
Tasting notes : Lean, orange zest, a little grip.
Food pairing : Some fleshy fish, maybe in the form of a fish curry with parathas.
