Roquefort is a classic blue mold, unpasteurised sheep's cheese from the South West. It is said to be the first blue cheese to have been produced in France, and is still matured in natural caves. It is easily recognisable by its blue veins and moist, crumbly texture. We get our Roquefort from the producer Vieux Berger, one of the very last producers that is artisanal (most Roquefort producers are now industrial). Roquefort is intense, complex, creamy and aromatic on the nose and palate. It is sharp and tangy with a high level of saltiness. (approx 170g)
