Produced with strong grains, which ensure a high capacity of liquid absorption and stability of the dough during cooking, it is a flour specifically designed for the production of fresh pasta. Ideal for both hand processing and extrusion, it gives excellent results with any type of liquid required by the recipe. It is an antioxidant-free flour that always keeps the color of the dough alive thanks to the high degree of refining that is obtained by means of advanced grinding technology.

The Molino Quaglia family, from Veneto, Italy, have been millers for 4 generations, since 1914 and have created the Petra Flour as a desire to combine the new milling technologies and the evolution of wheat production due to climate. Their desire was to create a high-quality flour that would be both suitable for restaurants and also for consumers at home.
