Pignoletto, Alionza, Albana, Malvasia

A truly unusual wine made in a truly unusual manner. The grapes are farmed biodynamically by Federico Orsi, just outside Bologna, a region known for great grapes but that has fallen out of fashion. Federico champions biodiversity, planting vegetables and raising pigs. 

Once the grapes are harvested and fermented it is added to a 10,000L concrete vat which contains maturing wine from many previous vintages. Each year, Federico draws off most of this to make his latest cuvée, which means that every wine is non-vintage. 

Tasting notes : Zesty citrus, saline, nutty. Fresh, savoury and unusually delectable! 

Food pairing : A great option for richer, chicken dishes like Coq-au-vin or a strong, nutty cheese like 24-month Comté !
