Alain Allier is one of Eric Pfifferling's (L'Anglore) disciples, dedicated to producing unusually delicate wines from grapes grown in the baking-hot environs of Nîmes, situated between the Southern Rhône and Languedoc. Despite being born into a winemaking family, there was no room on the family farm for him so he spent his early adult life as a mechanic before re-discovering his love for wine and founding Mouressipe. 

Cacou was the first wine ever made by Alain, 35 years ago. The wine's delicacy is the result of a complicated blend of fermentation techniques that carefully manage the amount of tannin extracted, resulting in a wine that is much lighter-bodied than the region's more typical products.   

Tasting notes : Red berries, Orange peel, Floral. Delicate with fresh acidity and gentle tannins. 

Food pairing : A good match for similarly delicate cheeses like Stravacco or Saint-Nectaire. Also pair with fresh pasta dishes, white meat or seafood.
