Tavel, nestled on the west bank of the Southern Rhône Valley was once one of France's most prestigious winemaking regions. Growers in this region have fought hard to maintain that reputation despite the devastation caused by phylloxera. Gaël Petit's great-grandfather lobbied for the area to become one of France's first AOCs and, in his honour, Gaël has re-created the front label used at the turn of the century. 

This wine is created using an intricate layering technique known as 'mille-feuille' which involved filling tanks with layers of crushed and uncrushed grapes. The idea is to finely balance the extraction of vibrant fruit aromas and tannin, creating a wine that is delicate without tasting thin. 

Tasting notes : Cherries, fresh herbs, earthy. Delicate texture with a hint of tannin. Serve chilled !

Food pairing : Try with some Duck rillettes on toasted bread !
