Syrah, Cinsault, Grenache

Minervois, situated just to the north-east of Carcassone, is one of the Languedoc's premier appellations. While its reputation for making quality wine has only recently been recognised, it has a long history of wine production; vines were introduced by Roman legionaries and both Cicero and Pliny wrote about the virtues of wine from Minervois. 

This classic Languedoc blend comes from clay-limestone soils. These retain water well, a valuable characteristic in a region known for its hot, dry summers. Meantime, the cooling influence of the Tramontane wind means that the vineyards are cooler than you might expect, producing a wine that combines richness and freshness. 

Tasting notes : Red cherries, roasted herbs, figs. Full-bodied with firm tannins.

Food pairing : Serve this with hearty dishes such as cassoulet !
