100% Cinsault
Mas des Agrunelles is situated north-west of Montpellier up on the Terrace du Larzac. Unlike the typical wines of the region, Frederic and Stephanie make delicate and subtle wines with gentle extraction. Rather than focusing on varietals, each of the 12 Mas des Agrunelles cuvees showcases the terroir of individual parcels covering 25ha and a range of soil types from fractured Jurassic limestone to red marne. Biodynamic principles are followed right down to bottling on fruit days, and when possible on the descending moon.
Les Mauves is from a north-facing Cinsault plot that was planted by Stéphanie’s mother, Geneviève, in the 70’s. The thin-skinned, delicate cinsault is fermented whole bunch for 15 days, producing a light and floral wine that is not dissimilar to a Beaujolais. Fermentation and elevage is in a mix of amphora and stainless-steel vats. The specific microclimate gives the wine a great acidity, with a good diurnal temperature range. Unfined, unfiltered and minimal sulfur.
Tasting notes : Raspberries, red cherries and violets. Light-bodied, fresh and great when served slightly chilled.
Food pairing : Try with roasted salmon, gently-flavoured cheese or even a simple salad.
