Manigodine is a washed rind cheese wrapped in smoked spruce wood from Savoie, and looks like a bigger version of Reblochon. It is matured by Paccard, our affineur in Manigod. The rind is white/light orange, and the texture is creamy and gooey. It has a farmy, woody smell. The closer the cheese is to the spruce, the sweeter and fruitier it tastes.
Ingredients: Milk (cow's), salt, traditional rennet. Unpasteurised.
