Langres is an orange washed rind cheese with a bright white core. It is named after the plateau of Langres, which is in the Champagne-Ardenne region. Production can be traced back to the 13th century, as it is mentioned in a song composed by the Dominican Prior of Langres. Mangres achieved appellation status (AOC) in 1919.
The rind, depending on its maturation, can go from a light yellow to a dark orange colour. It has a strong smell and taste, which is balanced by the creaminess of its paste. It has a good acidity and is overall a very well balanced cheese. Non dosage, dry sparkling wines are best to accompany the cheese.
