85% Malbec, 15% Merlot
Winemakers Maya Sallee and Nicolas Fernandez are based in Trespoux-Rassiels, nestled within the Cahors appellation of South-West France. They're part of a movement producing lighter, fresher red in a region known for rustic, powerful wine. This is achieved by limiting how much time the wine spends in contact with the skins of the grapes, thus controlling the extraction of tannin.
Maya and Nicolas make an exquisite Malbec from their .7ha within the lieu-dit (named vineyard) of Bois Grand. The combination of altitude - the vineyard sits at 340m above sea level - and a favourable aspect ensure that the wine maintains a balance between delicacy and power. 30 days on the skins brings powerful tannins, before ageing in old barrels and casks to round out their natural astringency. One to give a bit of air!
Tasting Notes : Blackberries, liquorice, floral. A dense, concentrated palate framed with fine-grained tannins and underlying freshness.
Food Pairing : This would make an excellent complement to game, such as roasted venison or a rich mallard stew !
