Finn is soft cow’s milk cheese, with a white bloomy rind. The aroma and flavour of the cheese develops as it matures- when young Finn is lactic on both the nose and palate, as it matures the flavour and aroma develop with hints of walnuts and mushrooms. Finn is soft in texture, with a buttery breakdown around the rind.

Produced by Neals Yard Creamery in rural Herefordshire close to the English border with Wales. Milk is collected daily from a single farm who have a small mixed heard of 40 ‘Friesian’ and ‘Jersey’ cattle. Finn is very much a homage to the Northern French tradition of double cream cheeses. The milk used to make the cheese in enriched with double cream. After coagulation Finn is left to set slowly, with minimal use of rennet, with a mold culture added to the rind before maturation.

Finn pairs very well with white wines from Burgundy and Champagne. Lighter, fruity reds also work very well.
