Carignan, Mourvèdre, Grenache
Chloé and Fred packed in their London jobs and travelled around France pursuing their dream of making wine. They settled on an eight-hectare garrigue-fringed slice of heaven in 2016. The location is on the hallowed soils of Faugères in the Languedoc, famous for its solid bedrock of Schist. On the rocky Schist soils, old vines have to work hard to establish their roots, but the result is concentrated and balanced wines.
Chloé and Fred farm biodynamically and use natural treatments and minimal copper. They have recently built a cellar that allows them to be self-sufficient on the land. Standing in the vineyard and looking out over the coastal plain and the sea, it is clear why the couple chose to name their domain ‘Serrals’, the Occitan word for hills.
This blend of Carignan, Mourvèdre and Grenache really compliments the rest of their cuvées, with the Carignan bringing more acidity, more rustic tannins with a palate of dried herbs, leather and garrigue.
