100% Pinot Noir

Naima and David took over 2 hectares in Chassey- le-Camp in the Cote de Beaune, a block comprised of Pinot Noir, Pinot Blanc and Aligote´ planted selection massal between 1947 and 1960. A great deal of work was carried out to renovate and bring the vineyard into full biodiversity, including planting as many trees as possible. Grapes are fermented whole bunch for a short time, before being pressed with an old wooden vertical press and raised for eight months of elevage in old wood. Stylistically the wines are perfumed, aromatic and silky and balance is always sought.

The Bourgogne Rouge is Pinot Noir fermented whole bunch in open fermenters. Elevage in old wood for 8 months with no added sulfur.

Food pairings : Slow braised fennel with wet polenta, or some Epoisses cheese if you like it punchy !
