Chenin Blanc
Domaine de la Paleine has produced Saumur wines in the AOC Puy-Notre-Dame for over a century. The current owners, Laurence and Mark Vincent, took over in 2005 and have been practising biodynamics (Demeter certified) since 2017.
Their 32ha consist of a mix of Chenin Blanc and Cabernet Franc and sit atop a vast 1.5km cellar carved out of the soft, white tuffeau rock the area is renowned for. Besides being an incredible sight in and of themselves, the cellars provide the perfect conditions to age and store their wines throughout the year.
Their Chenin comes from 25-year-old vines planted on clay and limestone-based soils. After fermentation with indigenous yeasts, the wine enjoys 12 months of rest in the aforementioned cellars before being bottled in September of the following year.
Tasting Notes : A rich, vibrant, refreshing Chenin Blanc with notes of green apples and white orchard fruit.
Food Pairing : This would be excellent alongside a Crottin de Chavignol.
