Coulommiers is a unpasteurised, soft-ripened, bloomy rind, cow's milk cheese produced outside Paris. Coulommiers is named after the town in which it was first made. It was created as a response to fact that some bries, such as Brie de Meaux, were hard to transport due to their shape. Coulommiers is smaller and thicker for that reason.
Coilommiers has a white rind that develops a reddish/orange colour as it matures. The paste is a shiny yellow and the centre can be chalky white. On the palate there is mushroom, cream and butter. As is matures the flavour intensifies and it can become runny, with gentle saline notes.
