We have worked with the Mayte since Provisions started in 2015. They are a ham specialist, but also make their own cured meats in St Jean Le Vieux in the Basque Country in France. They only use Basque pigs in their recipes.

This is their chorizo, a mild and semi-dry sausage with a natural casing, perfect for snacking or to use in a dish !
