Chateau Filhot - Sauternes 2010 - Bordeaux, France


Sémillon, Sauvignon Blanc, Muscadelle

The ultimate dessert wine. Sauternes, a small corner of Bordeaux, makes some the world's most famous pudding wines thanks to a foggy, damp climate that encourages the growth of noble rot, a helpful fungus, which helps the grapes concentrate their sugar and flavour, producing a uniquely flavoured wine. 

Chateau Filhot dates back to the 1700s. Its vineyards lay on a mix of gravel, clay and sandy soils on sites that face south and southwest. The Ciron river which passes through the vineyards brings with it autumn mists encouraging noble rot to develop in the vineyard. 

A tiny amount of juice is extracted from the grapes once they've been harvested and the wine is then fermented in oak barrels and vats for two years before being bottled. This oak aging adds yet more flavour to an already intense sweet wine.

Tasting notesMango, vanilla, honey. Intense sweetness balanced by vibrant acidity. 

Food pairing: A classic when paired with a strong and salty blue cheese like Roquefort or Stilton.
