Bourles Roncquoise

Bourles Roncquoise is a semi-circle cheese from Ferme Du Vinage dairy (based in North Pas De Calais). The cheese has a rind that goes from bright orange to grey depending on the maturation stage. The interior is orange with a semi-hard texture, and little holes in the paste. It is cavy on the nose, and slightly buttery on the palate with hints of hazelnut. It is a delicate and comforting cheese.

The production of Bourles Roncquoise is similar to the one of Mimolette, but The Bourles will be maturing for only 4 months, which makes it a very young version of Mimolette. 

Tasting notes : Bourles is delicious eaten on its own, with an Amber beer or Red Ale. You can also use it in the preparation for cheese Gougères.

Ingredients : Milk (cow's), Salt, Traditional rennet.
