Verjus, or Verjuice, is the must or grape juice made from pressing unripe green grapes. The result is a lightly tart but fresh juice. Verjus is perfect for adding a gentle acidity to a dish when lemon juice or vinegar would be too overpowering. It is great to use with foods that have a delicate flavour such as oysters, fish, or chicken. It also has a myriad of potential uses in the kitchen, use it for poaching, marinating or even pickling.
This Verjus comes to us from the Bourgoin family estate in Auvergne, who grow Ugni Blanc to make cognac. Their vineyards are tended to using biodynamic farming practices
