Blu di Capra
Blu di Capra is an unpasteurised, blue goat’s cheese from the Lombardy region of Italy. The Blu di Capra we sell at Provisions is produced by Carozzi Formaggi – a family company located in Pasturo, a commune in the Valsassina valley of Lombardy. We also import their stunning Taleggio. It was founded in 1960 by Aldo Carozzi and is now run by the third generation: Roberto and Donata Caraozzi along with their three children. They source milk from local dairies and combine modern technology with human passion, skill and respect for quality produce.
Blu di Capra has a reddish-brown rind with visible perforations across its surface, which facilitate mould growth. The paste is compact, ivory in colour and mottled with blue-green veining. It has aromas of milk and yoghurt, and the flavour is rather delicate for a blue cheese. There are herbal notes on the palate, along with flavours of toasted fruit, and a long spicy finish.
