Bleu de Gex
Bleu de Gex is a blue cow's milk cheese from Jura, France. It is matured by our Comte producer Marcel Petite. The rind is white and quite dense and dry, with small holes though which the Penicilum Glaucum spreads during the maturation.
The paste is creamy and dusty. It has notes of mushrooms and nuts on the nose, and is creamy and slightly bitter on the palate. Best enjoyed with a white wine from Jura or a Vin de Paille
