Mencia

Guimaro is a winery situated in the village of Sober, Ribeira Sacra. It was founded by Manolo and Carmen Rodriguez in 1991 and is currently run by Pedro Rodriguez, who took over in the early 2000s. Pedro's first order of business was to convert the estate to organic production. Since then, he has increasingly embraced more traditional winemaking methods, using only wild yeasts during fermentation, treading grapes by foot, and working with minimal sulphur.

The Tinto Joven is produced with 100% Mencia grapes sourced from multiple plots and grown at elevations of up to 550m above sea level from 40-year-old vines.

Tasting Notes : Fresh and bright with beautifully balanced acidity and a spicy finish.

Food Pairing : Some 14-month aged Manchego would be perfect here !
