100% Montepulciano
The Collina Biologica line is Francesco Cirelli’s négoce project, made with fruit sourced from organic growers around Pescara. Francesco himself cultivates four hectares of Trebbiano, Montepulciano, and Pecorino vines between the Adriatic coast and the snow-capped Apennine mountains. This forms part of a larger farm where he also grows olives, garlic, spelt, barley, and figs. Francesco's commitment to biodiversity is evident in his organically farmed vines, which flourish amidst cover crops such as clover and legumes, replenishing the calcareous clay soils with nitrogen.
For this beautiful Frizzante Rosato, Montepulciano grapes are hand-harvested, where the juice has a first fermentation process in stainless steel, utilising indigenous yeasts. The wine undergoes a second fermentation in the bottle, resulting in a slightly cloudy appearance due to lack of filtration. Minimal sulfur dioxide is added at bottling, aligning with Cirelli's philosophy of producing authentic wines with minimal intervention.
With a palate that is fresh and soft, with a crisp, crunchy effervescence and a delightful, lively finish marked by a pleasant salinity, this is the perfect park wine.
