Sextant - Foufounette - Bourgogne, France

£33.00

Aligoté, Apricots

Sextant is the project of Julien Altaber, a negociant winemaker based in St Aubin, Bourgogne. Originally from the Auvergne, Julien Altaber started his career at the side of Dominique Derain in Saint-Aubin. For Julien, Sextant is about “Special cuvées, pet nats, skins, fun and non-traditional wines”. The cellar is seen as a place to experiment and create, rather than only making terroir-based wines with big appellation names.

Foufounette is an unusual wine made from apricots which are macerated in the juice of freshly pressed Aligoté grapes for 10 days. The resulting wine-apricot hybrid is then bottled and fermented, producing delicate fizz.

Tasting notes : Apricots (unsurprisingly), Citrus, Funky. Dry with a slight fizz.

Food pairing : Triple cream Brillat-Savarin cheese !
