Wigmore is a soft and gooey sheep's milk cheese from Berkshire. It has a thin, bloomy rind with lightly vegetal flavour, and the paste is delicate with floral and salty notes. 

Made using unpasteurised sheep’s milk and vegetarian rennet, Wigmore cheese is made using a ‘washed-curd’ method, whereby during the make, some of the whey is removed and replaced with water. This results in a less acidic cheese which is milder in flavour. By removing some of the lactic acid, the breakdown is slower, which also helps to create a slightly firmer, fudgy texture with more bite.

Pair it with dried fruits or jams to highlight the sweetness of the milk. Also delicious baked into a cheesecake.
