Château de la Selve is located 30 miles north of Avignon in Grospierres, IGP Coteaux de l'Ardèche, and was originally a formidable stronghold. Today, it's known for its wines, and we couldn't be happier about that ! Benoit Chazallon is the young winemaker who, alongside his wife Florence, has been running his parents' 44-ha estate using biodynamic principles since 2002. Benoit is on a mission to reach the full potential of the Ardèche terroir, with its wild landscapes that include specific types of ultra-absorbent clay, limestone, scrubland and truffles !
The fruit comes from 30-year-old vines, grown biodynamically in the hillside parcel "Rouvière Boissy" as well as the "La Selve" and "Les Blaches" parcels. After being destemmed, the grapes are pressed directly, with just a little skin contact for colouration. The wine is then matured in 50hl concrete tanks for four months on its fine lees. No fining and just light filtration takes place.
Tasting Notes : Fresh, young white fruit. Delicate, with a floral quality from the Viognier.
Food Pairing : Gordal olives, fresh goat’s Cheese, tapenade and Grissini.
