Sextant is the project of Julien Altaber, a negociant winemaker based in St Aubin, Burgundy. For Julien, Sextant is about “Special cuvées, pet nats, skins, fun and non-traditional wines”. The cellar is seen as a place to experiment and create, rather than only making terroir-based wines with big appellation names.

An absolute banger of a pet-nat from Julien! The grapes undergo a skin-contact maceration: typically half destemmed bunches and half whole, left on their skins for about 10 to 11 days. It relies on spontaneous fermentation in the bottle to produce natural effervescence.
