Chardonnay

'En Chapon' is made with fruit from Vincent Talmot, who works with old, massal selection vines, gnarly and low-yielding, with some clones from the 1930’s and 1940’s. Fermentation takes places in stainless steel and is finished off in old barrels where it stays for around 9 months.

Tasting notes:  More oxidative style, rich, lots of bitter orange. Benefits from decanting.
