Ibaiama Ham

Maison Mayte have been producing charcuterie since 1884 using traditional Basque country techniques, and is presently headed by Eric and Sylvie, the 5th generation of the Mayte family. 

Ibaiama Ham is produced by only three families in the Basque Country, including Maison Mayte. Ibaiama was originally intended as a high quality Bayonne Ham, in 1985. The ham is made with local pigs, raised for at least a year and weighing about 180kg. The meat is cured with salt of Bearn and matured for 18 months, at least 12 months outdoors.

    You can choose to collect your online order from our shop or have it delivered by our partner courier services.

    - Same-day delivery within 5km of the shop is available via Stuart.

    - Next-day delivery across London is available via Packfleet for orders placed before 2pm.

    - National delivery across Great Britain (outside London) is handled by UPS and takes 2 to 4 business days.

    Orders of £75 or more qualify for free delivery across Great Britain with UPS/Packfleet. Shipping fees will be calculated at checkout based on the selected delivery method.
