Pouligny St. Pierre

Pouligny St. Pierre is a raw goat's milk cheese from Indre, in the centre of France.

The curds are ladled into pyramid-shaped molds and then matured for 3 to 5 weeks. Each cheese weighs approximately 250 grams which allows for a longer maturing period than smaller cheeses. This results in a stronger flavoured cheese with a harder texture. Pouligny has a nice acidity in flavour with notes of dried fruits. The harder texture makes this a great cheese for slicing and adding to a fresh salad or as a filling for ravioli.

Pouligny St. Pierre would pair nicely with a fresh Loire white or a light Chinon red !
