Mothais-sur-Feuille is an unpasteurised goat's cheese that is wrapped in a chestnut leaf,made in the Poitou-Charentes region of Western France. The AOC regulations of Mothais-sur-Feuille have existed since 2002 and specify that the chestnut leaf used must fall naturally from the tree. However, it must never touch the ground because of contamination risk. Each autumn, large nets are used to collect the chestnut leaves, which are then dried and used throughout the year. The leaf must be placed around the Mothais between three and five days after the cheese has been made.
Bright white in colour, it has a delicate wrinkly rind and creamy, comforting texture that becomes denser as it ripens in a dried chestnut leaf. When it ages it is particularly susceptible to blue mould dots that develop on the rind, which are perfectly edible and add flavour. Best paired with a light Cabernet from the Loire or a sparkling Chenin.
