César Florido is the oldest sherry bodega in Chipiona, a coastal town that lies outside the main production area for sherry known as the "sherry triangle". The Atlantic ocean is just 50m from the door of the bodega, which helps to maintain the cool, humid conditions needed to mature sherry, despite the prevailing heat of Andalucia. 

This Amontillado is made from family-owned vineyards (a rarity for sherry) and is initially aged under a flor of yeast (like fino and manzanilla) before being re-fortified to 18% ABV, allowing oxidative ageing (like an Oloroso). This process of ageing takes an average of eight years, allowing the wine to develop wonderful complexity. The wine is bottled without fining or filtration for added intensity. 

Tasting notes : A cross between a Fino and an Oloroso. Dried apricots, hazelnuts, saline. Dry and complex. 

Food pairing : A great match for umami-based dishes and funky cheese like Camembert
