Westcombe Cheddar

This is an unpasteurised, cow's milk, Somerset cheddar from Westcombe dairy. Cheddar is the UK’s most popular cheese, accounting for more than 50% of all cheese sales. Although the term cheddar cheese is widely used, only traditionally manufactured Cheddar produced from local milk within Somerset, Dorset, Devon and Cornwall fall under the PDO certification, which was created in 2007. Records show that Cheddar was being made at Westcombe Farm as early as 1890 by prolific cheese-maker, Edith Cannon, who inspires the current Westcombe Cheddar recipe.

Westcombe Cheddar has a thin, light brown rind and the paste is smooth, compact and a lovely deep yellow colour. As it ages, some blue veining may occur and it becomes more crumbly. It has an earthy aroma and the flavour is deep and complex. There are notes of hazelnut and caramel, complemented by a good level of acidity which brings out a citrus tang.
